TUNA – inexpensive and convenient, tuna ranks as country’s favourite fish; we buy more than 800 million pounds a year, mostly in cans. While it’s healthy promoting food, tuna does contain relatively high levels of mercury. The amount of omega 3-fats in tuna varies greatly, from 0.3g in 3 ounces of fresh yellowfin to 0.8g in canned albacore (white) to 1.4g in fresh bluefin.

Your best choice here is canned tuna. While the process of canning causes the fish to lose some of its heart-healthy fat, canned tuna comes form smaller, younger fish and therefore has less mercury than fresh tuna. White tuna has more omega-3 fats than light tuna, but also slightly higher mercury levels. Buy canned tuna packed in…

I still don’t know what happened why my spices in the rotating rack disappeared. There were several of their brand, still unused because I wanted to finish the old ones first. But where are my spices? It is strange that someone would haul my spices. Spices are indispensable in my cooking, as everyone’s, but I just can’t let go of the set. I would gladly give to to whoever is using them now, but I just want to know where are my spices..

I have a riddle: “In winter it is an insect; in summer it is a mushroom.”
Have you heard such a thing? Well, it’s not really a riddle for the thing indeed exist. They are called Dong Chong Xia Cao in Chinese or Cordyceps. It is usually cooked with Ba gua soup. It is kind of sad when we think of the insect, isn’t it? It is a caterpillar-like insect, in fact it is called ‘vegetable caterpillar’ after a fungi replaces the worm cells. Dong Chong means “in winter it is an insect; Xia Cao means “in summer it is a mushroom”. But this mushroom is not ordinary vegetable, as if it is not already. It is used for strengthening the…

There are many varieties of rice, and one way of cooking it is by boiling or steaming. Do you peek when steaming rice? We are supposed to let the cooked rice steam for about 15 minutes or so before opening the lid to not to let the steam out and lower the temperature during cooking. But right after it is cooked, you can peek a little (naughty) and let it steam your face for few seconds, it is good for the skin, makes face smooth and without pimples, and let the facial skin ‘breathe’, unless it is so hot you can’t breath and burn yourself.

Rice is one of the most compatible and versatile foods. These grains which are a good source of protein from a rice grass which originated from semi-aquatic grass in Asia is now the staple of about 70% of the world’s population. America now provides about 12% of world rice trade. And I glad that we can buy rice here from some supermarkets and especially in all Asian stores. Nuts, seeds, beans or meat are good sources of protein but it is best if combined with rice. I love American food but I can’t eat in one day without rice. That is when I feel full.

I was watching a series last night about traditional food and cooking. I was reminded of the special characteristic of foods that we prepare, the effects to those who eat them.

One ingredient has many elements.
If mixed with a certain thing it may bring out the best effect, but sometimes it may cause harm and cannot be mixed with certain ingredients. That is the special characteristic of food.

Just like for example, in order to remove the odor of the pork, clover flower bud is added, but if it is added to turmeric herbal soup, if will cause diarrhoea and vomiting.

Rice stick/s are noodles made from rice flour and water. They are eaten as part of a stir fry, soup dish, or salad in Asian cuisines. They are sold in different widths and under different names in various Asian countries and Asian stores here in the United States.

Pancit bihon guisado or Sauted Rice Stick is quick and easy to cook. And more importantly, hubby loves it, so I have been cooking it quiet a lot now. I am positive you will like it too, so I am sharing this easy recipe:

Ingredients

One of the crops I planted was sweet potato. Our garden will just be for our own consumption and there are just two of us so it is not that big. We could harvest the root crop but my primary thought in mind is to make a salad out of its greens. It is a very healthy, supplement for those with anemia, so good for the blood, and delicious too. This is my first harvest:

For the sauce, combine vinegar, soy sauce, diced onions and tomatoes or add shrimp paste for a more mouth-watering taste.
