Hot cocoa
1/3 cup sugar
1/3 cup cocoa
¼ teaspoon salt
1 ½ cup water
4 ½ cups milk
Mix sugar, cocoa and salt in 2-quart saucepan and add water. Heat to boiling, stirring constantly. Boil and stir 2 minutes. Stir in milk, heat just until hot (do not boil). Stir in ¼ tsp vanilla if desired. Beat with hand beater until foamy or stir until smooth. Serve immediately. 9 serving (about 2/3cup each).
Coco shrimp
I really love shrimps but it is sad to say that I am allergic to it. But sometimes I will take antihistamine before I eat it. I like it no matter how it is cooked. One of my favorite menu of it is coco shrimp. It is very easy to prepare and cook.
In a skillet, heat 4 Tbsp oil then sauté 1 clove minced garlic, 1 small chopped onion and 4 slices ginger. Add ½ kilo shrimps. Cook until orange then add 1 cup coconut cream, 1 bundle sliced fresh asparagus, 2 ½ cup button mushrooms. Season with patis and pepper. Cook until sauce is slightly thick.

Banana Bread
Our cook in our clinic where we work used to make banana bread every week. It is so yummy.
1 cup sugar
1/3 cup margarine or butter
2 eggs
1 ½ cup mashed ripe bananas (3-4 medium)
1/3 cup water
1 2/3 cups all-purpose flour
1 tsp baking soda
½ tsp salt
¼ tsp baking powder
½ cup chopped nuts
Heat over to 350 degree. Grease bottom only of loaf pan, 81/2 x 21/2 or 9×5 x3 inches. Mix sugar and margarine in 2 ½ quart bowl. Stir in eggs until blended. Add banana and water, beat 30 seconds. Stir in remaining ingredients except nuts just until moistened, stir in nuts. Pour into pan. Bake until wooden pick inserted in center comes out clean. 8-inch loaf 1 ¼ hours. 9-inch loaf…
Hot chocolate
Usually when I am on night shift, I used to make hot chocolate to keep me awake and alert during the 8-hour shift. It is very easy to make.
Ingredients:
2 ounces unsweetened chocolate
1 cup water
¼ cup sugar
Dash of salt
3 cups milk
Heat chocolate and water in 1 ½ quart saucepan, stirring constantly, until chocolate is melted and mixture is smooth. Stir in sugar and salt. Heat to boiling, reduce heat. Simmer uncovered, stirring constantly, 4 minutes.
Stir in milk, heat just until hot (do not boil). Beat with hand beater until foamy. Serve immediately. 6 servings (about 2/3 cup each). 165 calorie/serving.
Pancakes
My co-workers love pancakes. We used to cook it when we are off duty or before we work morning shift. It is yummy and it is easy to prepare.
1 egg
1 cup all- purpose flour
¾ cup milk
1 Tbsp sugar
2 Tbsp shortening, melted, or vegetable oil.
3 tsp baking powder
½ tsp salt
Beat egg with hand beater until floppy, beat in remaining ingredients just until smooth. For thinner pancakes, stir in additional ¼ cup milk. Grease heated griddle if necessary. (To test griddle, sprinkle with few drops water. If bubbles skitter around, heat is just right.

Million miles away
Do you ever feel like God is million miles away and is not listening to you prayers? I do feel like it today. In my low moments like this, I have to read the bible. After reading some verses, it always reminded me that God is not only there, but He is interested in every aspect of my life. In fact, He wrote the bible to tell His limitless, unconditional love and that He longs to share a personal intimate relationship with you and me.
Calming breath
Every time I felt stressed and pressured, I tried to calm myself down by doing deep and calming breath. It is just very easy to do. It will really make you feel relax and alive again. When you breathe properly you will have proper oxygenation that will give you energy. You can try this calming breath it is just very easy and it is very effective. Close your eyes and cover your right nostril with your right thumb. Exhale all the air from your lungs through your left nostril, and then inhale through the same nostril for four counts. Goodbye does’nt mean forever
I was so sad that she is leaving. It really broke my heart but I already accepted the fact that life is like that. Friends come and go but the most important thing is that you touched each others’ lives. Friendship is not based on the distance but how you treasure each other in your hearts. My friend will never be distant because she stays close to my heart. I hold her in my heart. She is my diamond as diamonds never fade. I miss her a lot though but we still keep in touch through emails and phone calls.
Practice thanksgiving
The vegetales song “Thankfulness” keeps on popping in my mind today. I am reminded to give thanks to God and people is the easy way to start a joyful day.We should say a prayer of thanks for everyone and everything you come across today. No exceptions! Turn on the light and bless those who discovered electricity. Bless the farmers who grew the food you’re packing in the kid’s lunch. When you get in the car, bless the automotive engineers who invented seat belts. Add a little extra
I am just an ordinary person. But I have no worry being one I just add a little extra that makes me extraordinary. A laid back person who wants to do the things in order and on the right time, wants to do my best as I can be, brightens every corner where I am at. I have passion on photography, enjoying capturing anything that captures my eyes and attention. Always amaze of the beauty and wonders of the world. I really marveled how mighty our God is, the creator of all.
